I made my first risotto last saturday and wednesday was the second time, this time I made it with spinach and I LOVE IT!!!
I had a pile of magazines in my livingroom I still had to read, so I started with Ikea, next was Elle Decoration, and now I'm gonna read Foodies, a magazine about cooking.

A long summer weekend
Hi ya'll
It was summer in Holland last days.
Friday 2 friends were coming over for supper and I started preparing the food at 2 in the afternoon. I decide to make pork in Guinness in the tajine and potatoes from the oven with a nice crispy fresh salad.
Give the pork hours to simmer and it is soft, tastefull and has, according to my fiance and friends, subtile Guinness flavour.
The potatoes were given a good hours to cook with seasalt and rosemary.
Saturday I was, again, cooking. I made muffins. 2 different flavours, with chocolat and with duo penotti and almond.
Why I was making muffins while it 27 degrees celsius you ask? Well, because we had a party to attend and we all bring something to eat. So I also made risotto, for the first time, and it worked our great. I never knew risotto was comfortfood. It warm, an explosion of taste in your mouth and, that's very rare for comfortfood, also kind of healthy.
The party, who was at a friends house, was great. Thank Marion and Billy, I know you're reading this ;P
And the sun was still shining..
So sunday I got a wel deserved day at the swimmingpool. A friend of us tagged along and we had fun, sun and a good book (Sookie stackhouse).
Monday (second pentecost day) was still very good weather, but we had some shopping to do, with the weddig and honeymooon coming up in a few days.
I bought a funny shirt, a suncap and Hans bought a new pair of jeans.
In the afternoon we had a very nice bbq on our balcony (new recipes without mushrooms and/or tomatoes are always welcome) and after that we did a lot of wedding preparation.
We wrapped all the gifts, put all the decorations in a shopper, made a bag with stuff that has to come with us when we get married (like rings etc.) and things that need to go to my parents place, because that's where Hans will come to pick me up in the morning.
We also made a long list of everything we have to pack for our honeymoon.
It's not some fancy hotel we're going to, but we go camping. In our own tent, so we have to bring everything. But is there anything that can beat sitting in front of your tent, making food with the sun in your face and your toes in the grass? No!
And I have to buy a new dress, for our handfasting, that will be Sunday June 10 at the beach. My weddingdress and everything else (underskirts, corset etc.) is too much to take with us on our holiday. So more shopping!

Hodgepodge
I felt like writing something, though there is not so much to tell.
Today I bought 4 skeins of yarn, €1,00 for all of them, that extremely cheap, and 1 of them is 100% cotton!
I also bought a few books and 4 bags with molds for quilting.
We love to bbq on our balcony, wich we did yesterday:
O, and I do have something new, I got myself a lip piercing last Sunday on a festival.
It's pretty warm here now, 26 degrees celsius or 78.8 fahrenheit. I was planning on cleaning the balcony, but it's too hot. I don't really enjoy sun and warm weather, but I do enjoy my balcony in the evening.
2 weeks till wedding, can't wait! We have a few things left to arrange and do, but things are coming to an end. Let's hope for a bit of sun and a lot of happy memories.
As said before, not much to tell. I'll leave you with a nice picture and now I'm gonna clean out my studio. Time for spring-cleaning ;)

A not so regular wednesday
Today we're going to the Marriage Official!!
We'll be discussing our ceremony with her today at 4.15.
Hans didn't have to work today (and tommorow is a national holiday so he is at home 2 days in a row!)so we did some cleaning and, in my case, baking.
Yesterday I made banana muffins, and I just put 12 strawberry muffins in the oven.
My lunch for today: a fruitsalad with grapes, strawberries and a left over banana from yesterday, and a banana muffin. They are goooooooood ;)
Hopefully the strawberry muffins will be just as good!
I made the muffins milkfree, I used soymilk and 100% vegetable butter. They are not vegan, I used eggs.
I don't see a problem in using eggs allthough I'm a vegetarian, nothing died for the eggs and even my 2 studip birds lay eggs, and there is no male bird in the cage. But I don't eat canary eggs. I'm not even sure you can eat them...
The day before yesterday after supper I watched our fishes in their tank and made some pictures:
We do need a larger tank, but for now they'll have to be patient. This is a 60 liter tank and we have 4 fishes. But one of them is huge.
I'm hoping to go out today and pluck nettles, I wanna try to make nettlesoup. It's a vegetarian recipe, but you can always use chicken or beef stock if you want.
It very easy.
You pluck the top leaves of nettles (wear gloves to protect your hands) and only pluck from plants that do now grow near a road.
Ingredients for 4 to 6 people.
2 onions
garlic (as much as you like)
2 pounds nettleleaves (not the roots or stems)
4.2 cups stock (or 1 liter, I'm not so good with the USA system)
A pinch of salt
How to:
Cut onions and garlic, simmer them with a bit of oil (in my case sunseedoil) and wash the nettleleaves.
Boil the leaves untill they shrink. Cut them in small pieces after boiling and shrinking.
Add stock and leaves to the onion and garlic.
Boil 10/15 minutes. Add pepper and salt if you wish.
A nice side dish is croutons. Cut a few slices of bread, add some salt+pepper and/or herbs, sprinkle them with some olive oil and put them in the oven (stir carefully) untill they are gold and crunchy. Sprinkle them on your soup.
Enjoy!

Mirror Monday

We've spend yesterday morning in the zoo, trying to find the best spots for our weddingpictures. We will be making pictures there with our bridesmaids, in the morning, after that we get married in Landhuis de Oliphant and have a party later that evening.
It's coming very close now, just 3 weeks and 2 days!
My niece, and youngest bridesmaid looks beautiful.

Hello again
Today Hans didn't have to work, meaning he could bring me to the GP, because I need shots every week for the coming 10 weeks and after that gradually reduce to one shot every 3 months because I have a vitamin shortage.
And after that the fun began, we went to the petting zoo first, we saw horses, donkey`s, goats, bunnies, chickens and guinea pigs.
The weather was gray, but fresh and nice.
Next stop was the first secondhandshop of the day, I bought something that will be for the give away, so I will not tell yet, and a big bird cross- stitch kit.
The next secondhandshop had a better loot for us, a huge brown woollen blanket, a videogame, again something for the give away and a Mnr de Uil (an owl from a children tv serie) stuffed animal.
And the third secondhandshop had nothing for us, but we had to be there cause it's near the library where we had to return our books.
I've been meaning to buy nice chopsticks for myself, since I'm constantly using boring plain wooden chopsticks, so I bought a nice black pair with green and gold cranes in the toko. They are lovely!
We also picked up a previously ordered controller for our Playstation 2, and visit the haberdashery shop to buy something for the give away ;).
After that, we went to one of my favorite shops!
Lydialaine, a local yarn shop.
I made a snuggy for my Iphone earlier, and Hans wanted one too, so he had to pick a yarn.
He decided a silk/coton blend would do, in a nice graphite-gray.
It's really smooth and lush.
Now I'm listening to Harry Potter and the Chamber of Secrets while knitting Hans`s Iphone snuggy.
